The wedding cake is one of many items found on the Wedding to do list of engaged couples. traditionally the cake has been an iced and marzipaned fruit cake with a tradition of the top tier being saved for the christening of the happy couples first child. Whilst fruit cake is still popular the wedding cake has now seen an evolution into something quite different.
So what is a modern day wedding cake ?
A modern day wedding cake is still often tiered although the tradition of dowels and cakes being layered directly on top of each other is not always now the case and there is now an array of stands on the market including those with a shelf for each layer. With these layers a layer may or two may still exist as the traditional fruit cake but with modern tastes some if not all layers have been replaced with modern alternatives such as sponge and butter cream and fondant or the ever popular chocolate cake . Cup cakes have seen a modern day resurgence and this has filtered through to weddings with some wedding cakes actually consisting of lots of individual cup cakes which can be identical or shaded to match the wedding theme .
With the cost of a modern day wedding, some engaged couples are looking as the wedding cake to be the dessert . The cake is sometimes not consumed at a wedding breakfast after the meal and some feel it is a waste of the wedding budget , so some wedding cakes now have a multipurpose both as the wedding cake but also as the dessert. This has meant that white chocolate cakes, and mousse cakes which can be served with a fruit compote have become popular. The increased interest in baking with programmes such as “The Great British Bake Off ” has also lead bride to discover other alternatives such as the Croquembouche in either the traditional caramel and sugar coated almonds or the chocolate variety.
